Our Favorite Ways to Cook With Okra

Each summer, when okra arrives at the farmers market, you’ll find pods ranging from bright green to deep purple, all with the vegetable’s characteristic ridged shape and distinctive, snappy texture. As it cooks, it releases a viscous substance that can make it pleasantly silky or, depending on your point of view, decidedly slimy. Whichever way you see it, though, that quality has made it a useful and beloved ingredient, especially when used as a natural thickening agent.
